If your food earned airline frequent-flier miles, you’d be jetting to Europe for free.

With the construction of the courtyard garden, environmental science did a small part in helping the Food and Nutrition classes stop this absurdity. The raised beds that you visited the first week of school were the results of their hard work. Even though the food is grown locally now, the soil itself still has to be shipped.
Chemical fertilizer is used to enhance soil nutrients; however our garden is an organic garden which precludes the use of chemicals. Compost has been shown to increase yield as well. The garden grant included the purchase of 2 composters which are occasionally used. We have all the equipment we need for a self-sustained garden; however it’s not being used to its fullest potential.
